Ayam Betutu Looks Simple But Taste Amazing

Great day to tell you about experience during holiday in Bali. Bali offers amazing panorama or amazing view, Bali also has many delicious and savory traditional foods but today i would like to tell you about Ayam Betutu or Betutu Chicken, have you try Ayam Betutu before?  If you didn’t have taste it yet, this article would give you some information about this food. Here is it!

Ayam Betutu is the balinese food (side dish) which is well known in most of bali , you can find it in the restaurant or  hotel in Bali. One of manufacturer betutu is Melinggih village,  Gianyar regency. Betutu also a typical food of Gilimanuk. Betutu used as offerings in religious rites and ceremonies but also for dish and sold.


Ayam Betutu is made from roasted chicken mix with spices such as garlic , tumeric , shallot. This traditional dish is very popular nowadays, Many travelers from other regions of Indonesia brought Betutu dishes as Balinese-gift for their families. You also can make it on your own and this is the recipe;


  • 4 pounds fresh chicken
  • betutu spice
  • Salt and pepper
  • Tamarind water (4 or 5 strips of deseeded tamarind pulp dissolved in 1 cup water), to soften
  • Banana Leaf or Aluminium foil
  • 3 salam leaves

Betutu Spice;

-1/2 cup peeled shallots
-1/4 cup peeled garlic
-2 tablespoons fresh tumeric
-2 tablespoons fresh peeled ginger
-2 tablespoons galangal
-2 tablespoons wild ginger
-3 whole candlenuts
-2 tablespoons Balinese 1000-spice
-2 tablespoons fresh hot chile peppers seeded and cleaned
-4 tablespoons shrimp paste
-2 tablespoons finely chopped peanuts
-1/4 cup coconut oil


The Process;

  1. Preheat grill
  2. Massage chicken with betutu spice mix. Season with salt and pepper and tamarind water. Wrap chicken completely with banana leaves or greased parchment paper and then foil. Place on grill for 30 minutes.
  3. Betutu spice:
    Grind shallots, garlic, tumeric, ginger, galangal, wild ginger, candlenuts, 1000-spice, chile peppers, shrimp paste, and peanuts in a food processor. Saute paste with coconut oil.
  4. Mix chicken with spice
